- Raw chicken breast2 unit(s)
- Garlic and Onion Powder2 tablespoon
- Flaxseed Flour1 tablespoon
- Water3 tablespoon
- Salt1 teaspoon
- Black pepper1/4 teaspoon
- Oregano (optional)1 teaspoon
- Eggs2 unit(s)
- Sesame1/2 unit(s)
- Amaranth Flakes1/2 cup
- Nutritional Yeast (optional)1/4 cup
- Start by making the flaxseed gel: mix the flaxseed meal with the water for 5 minutes until it forms a gelatinous water.
- In a food processor, place the coarsely chopped chicken breasts, along with the garlic and onion powder, flaxseed gel, salt, pepper, and oregano.
- Mix everything until you get a moldable dough that comes away from your hands.
- Make balls in the shape of nuggets with your hands and dip them in the beaten eggs.
- Then coat with the sesame, amaranth and yeast mixture (if you don't add the yeast, add salt or replace with grated Parmesan cheese).
- Bake in a preheated oven at 200ºC for about 25-30min, turning them halfway through.
