Start by making the flaxseed gel: mix the flaxseed meal with the water for 5 minutes until it forms a gelatinous water.
In a food processor, place the coarsely chopped chicken breasts, along with the garlic and onion powder, flaxseed gel, salt, pepper, and oregano.
Mix everything until you get a moldable dough that comes away from your hands.
Make balls in the shape of nuggets with your hands and dip them in the beaten eggs.
Then coat with the sesame, amaranth and yeast mixture (if you don't add the yeast, add salt or replace with grated Parmesan cheese).
Bake in a preheated oven at 200ºC for about 25-30min, turning them halfway through.
