Eggplant stuffed with chicken

Cut the eggplant in half lengthwise and remove the pulp.
In a roast, fill the 2 halves with the shredded chicken. Top with cheese and sprinkle with oregano.
Place in a preheated oven at 200ºC and bake for about 20 minutes or until the eggplant is cooked.
