  1. Write down the tips: first you need to understand that we are going to start seasoning the meat a day before, ok?
  2. Defrost the meat at room temperature and while it defrosts you prepare the seasoning, my Grandmother's secret and the flavor of our family Christmases
  3. 🍀Ingredients for the seasoning (for 2kg): parsley and mint to taste, 1 tbsp of complete seasoning, 1/2 grated onion, 2 cloves of garlic....
  4. ...1 tbsp of saffron, 1 tbsp of Worcestershire sauce, 1/2 glass of filtered water and 1 tbsp of vinegar. Blend everything in the blender.

  2. Once the meat is thawed, wash it well under running water. In a bowl, place the seasoning inside and outside the "Frangão".
  3. Place in a bowl with a lid and place in the fridge. From time to time, turn the "Frangão" to ensure that it gets the flavor of the seasoning throughout.

  2. Preheat the oven to 200°C, place the "Chicken" with all the seasoning broth wrapped in aluminum foil (tightly closed) in the oven and monitor the cooking process.
  3. In general, it takes about 3 hours to bake. Once you see that the meat is well cooked, remove the aluminum foil.
  4. Remove the excess broth from the pan and set aside (later we will make a sauce with it).
  5. Spread a generous layer of butter all over the "Frangão" (if you prefer, spread butter with thyme and other herbs) and place in the oven to brown.
  6. Turn it on both sides to ensure it is golden all over. And ready!! Then just use your creativity and serve however you want.
  7. I sealed pineapple slices in butter and decorated the mold with herbs and dried fruits.

  2. Take the broth that was in the oven tray, strain it and reserve the liquid part. Place in a container with a lid and leave in the freezer for 30 minutes.
  3. The fat will "harden" and become easier to remove.
  4. Take the remaining liquid, put it in a pan and mix it with a little apple juice.
  5. To thicken, dissolve 1 tbsp of cornstarch in water, and mix with the rest of the sauce. Serve separately.
