- Free-range chicken cut into pieces2 kg
- boiling water2 l
- vinegar3 tablespoon
- oil3 tablespoon
- crushed garlic5 unit(s)
- large chopped onion1 unit(s)
- paprika1 tablespoon
- mint leaves3 unit(s)
- basil to taste
- salt to taste
- boiled cassava in pieces1/2 kg
- In a bowl, place the free-range chicken cut into pieces and pour a liter of boiling water along with the vinegar (to remove the chicken smell) and drain. Discard this vinegar water. In a pan over medium heat, place the oil and sauté the crushed garlic cloves with the chopped onion.
- Add the paprika, mint and basil leaves (or basil) and season with salt to taste. After about 5 minutes add the chicken pieces and mix well. Let it fry in the seasoning for about 10 minutes and add a liter of boiling water, little by little, until the chicken is cooked (+/- 15 minutes).
- In another pan, take some of the chicken cooking broth, add the other half of the onion and the cooked cassava in pieces and sauté for 3 minutes.
- To serve, add the cooked chicken pieces to the cooked and sautéed cassava and serve with rice, beans, salad leaves and farofa.
