Chicken drumsticks with onion and orange cream

  • Pear orange🍊 (mine had a lot of juice, if yours has little, you can use two)1 unit(s)

  • Bahia seasoning to taste
  • Potatoes, cut in half10 unit(s)
  • Onion appetizer (small)10 unit(s)
  • Olive oil to taste
  1. Start with the chicken, place it in a bowl and squeeze the lemons into it. Mix well for the lemon to get them all. Reserve that bowl. Tip 1: lemon helps to remove the chicken smell, if you don't have it, you can put vinegar in its place.
  2. In a food processor or blender, blend the onion and garlic until very small. Transfer to a pot and add 1/2 onion cream, mayonnaise, pepper, cumin, Bahia seasoning and a pinch of salt. Add this mixture to the bowl with the chicken. Stir well so that all the chickens are well seasoned. Take a baking sheet, drizzle it with olive oil and arrange your chickens on it. Scrape the seasoning from the bowl on top. Let the chicken get seasoning for about 2 hours, it can even be overnight in the fridge. Tip 1: if you put the chicken in the fridge, take it out about 30 minutes before going to the oven, so it will stay at room temperature and not go cold in the oven. Tip 2: if you don't have time, let it rest out of the fridge while you prepare the rest of the recipe, about 30 minutes.
  3. While your chicken is resting, cook the potatoes in water with a little salt. Leave them Al dente, because they are still in the oven. When ready, drain and reserve. Peel all the scallions appetizer, leave them whole. Reserve. Take a head of garlic, peel and all and cut a piece (same as in the photo) to leave the garlic inside exposed. Reserve. Tip 1: make white rice and farofa too, because it goes really well!
  4. Now take your roast with the chicken, put the onions appetizer, the head of garlic, pour olive oil on top, especially the garlic and sprinkle the rest of the onion cream. Close with aluminum foil and oven!!! Mine was 40 minutes cooking with aluminum foil at 200 degrees. Tip 1: I don't preheat my oven because it's small and heats up really fast. But if yours is big, preheat to about 200 degrees for 15 minutes.
  5. When the cooking time passes, you will see that it will be whitish and will have released water, remove the aluminum foil. Carefully, my mother helped me, with a spatula, pull the chicken to one corner of the roasting pan, in the other empty half, place the roasted potatoes. Take the orange and squeeze it over the entire platter. Return the roast to the oven, without aluminum foil, for about 30 minutes at 220 degrees until it's golden just like the photo!! After that time, it will be ready to serve and I can tell you that it will be delicious!!!!!!!!!!!
