Chicken1 kg
Cassava1 kg
Onion1 unit(s)
Tomato4 unit(s)
Red Pepper1 unit(s)
Yellow pepper1 unit(s)
Oil3 tablespoon
Palm oil2 tablespoon
coconut milk200 ml
Chopped coriander1 cup
Salt to taste

cook the cassava and reserve 2 cups just the cooking broth. Season the chicken with salt in a pan and sauté the chicken.
Add the garlic, onion, tomatoes and peppers and cook over low heat.
Beat the cassava in a blender or food processor with 2 cups of the reserved broth until it becomes a puree.
Place the coconut milk, palm oil, pepper and coriander in the chicken stew and the beaten cassava mixture. Serve with white rice.
