  • Cassava1 kg
  • Onion1 unit(s)
  • Tomato4 unit(s)
  • Red Pepper1 unit(s)
  • Yellow pepper1 unit(s)
  • Oil3 tablespoon
  • Palm oil2 tablespoon
  • coconut milk200 ml
  • Chopped coriander1 cup
  • Salt to taste
  1. cook the cassava and reserve 2 cups just the cooking broth. Season the chicken with salt in a pan and sauté the chicken.
  2. Add the garlic, onion, tomatoes and peppers and cook over low heat.
  3. Beat the cassava in a blender or food processor with 2 cups of the reserved broth until it becomes a puree.
  4. Place the coconut milk, palm oil, pepper and coriander in the chicken stew and the beaten cassava mixture. Serve with white rice.
