- Cassava1 kg

- Tomato4 unit(s)
- Red Pepper1 unit(s)
- Yellow pepper1 unit(s)
- Oil3 tablespoon
- Palm oil2 tablespoon
- coconut milk200 ml
- Chopped coriander1 cup
- Salt to taste
- cook the cassava and reserve 2 cups just the cooking broth. Season the chicken with salt in a pan and sauté the chicken.
- Add the garlic, onion, tomatoes and peppers and cook over low heat.
- Beat the cassava in a blender or food processor with 2 cups of the reserved broth until it becomes a puree.
- Place the coconut milk, palm oil, pepper and coriander in the chicken stew and the beaten cassava mixture. Serve with white rice.
