Cook the chayote in a little salted water. Drain the water WELL and hit the blender with 1/2 chopped onion+ 2 egg yolks+parmesan cheese+milk or cream.
Brown the other half of the onion and garlic in the oil and throw this sauté in the blender (wait to cool a little).
Finally, pour the dough into the pan, add the tapioca + 2 snow whites and bake in a refractory greased with olive oil at 180 degrees.
On top I used slices of mozzarella for fixings, leave for approximately 25 minutes in the oven or until golden.
