- Unsalted butter100 g

- Shimej mushroom150 g
- shitake mushroom150 g
- Rosemary to taste
- Basil to taste

- Fresh cream350 ml
- Nutmeg to taste
- Grated Parmesan200 g
- Beans to taste
- Black pepper to taste
- Pasta Mix the wheat with an egg, salt and butter in cubes with your fingertips until you form a smooth dough, wrap in plastic and reserve for 30 minutes in the fridge.
- Sauté the mushrooms with the herbs with olive oil and salt and set aside.
- In a bowl, beat the three eggs with salt, black pepper and grated nutmeg, then add the cream and grated parmesan.
- Remove the dough from the fridge until it becomes soft and with the help of a plastic and the rolling pin open the dough and place it in a removable ring mold, adjust the dough with the help of your fingers forming a pie base, cut a circle of butter paper line the dough dough and put beans so that it does not grow forming a bubble at a temperature of 180°c until the dough is golden.
- Remove the dough and let it cool, removing the parchment paper and the beans, put the sautéed mushrooms and the liquid beaten with the eggs and the cream, take it to the oven for approximately 40 minutes.
