  • Wheat for kibbeh1 cup
  • Pumpkin/Cabotia Strawberry2 cup
  • Onion1 unit(s)
  • Lemon (juice)1/2 unit(s)
  • Salt to taste
  • Black pepper to taste
  • Parsley to taste
  • Mint to taste
  1. Put the wheat in a bowl and with water to hydrate for 15 minutes.
  2. Meanwhile, sauté onion and garlic in olive oil, then add chopped pumpkin. Add a cup of water and let it cook until the pumpkin is soft. Knead until it becomes a puree.
  3. Drain the wheat, add the puree and the rest of the ingredients. Mix until you get a dense, moist mass.
  4. Transfer to a refractory, make the traditional cut of the kibbe (in checkerboard) and drizzle with olive oil.
  5. Bake in a preheated oven at 200° for 25 minutes.
