Incorporate the cold butter into the flour with your fingertips until it becomes crumbly, add the water and mix. Cover with plastic wrap and let rest for at least 1 hour. Afterwards, bake with a weight on top for 40 minutes at 180 degrees.
Cut the onion into thin strips and leave it submerged in ice water.
Cut the pepperoni into cubes and sauté with a drizzle of olive oil, reserving a part for finishing
Mix the cream, cottage cheese, egg, pepperoni in a bowl and fill the pre-baked dough, add the mozzarella on top and the properly drained onion and sprinkle pepperoni pepper to taste.
Place in the oven on browning mode and remove when golden.
