- Coconut oil30 g
- Vanilla Extract15 ml
- Oat flour50 g
- Brown rice flour20 g
- Brewed coffee50 g
- Cinnamon powder3 g
- Cocoa5 g
- Yeast5 g
- Ganache: 70% chocolate80 g
- Ganache: almond milk1 cup
- Ganache: brewed coffee40 g
- Beat the eggs with the xylitol until doubled in size.
- Add the oil and extract and beat for another 20 seconds.
- Add the flours, cocoa, cinnamon and coffee and beat for 30 seconds or until smooth.
- Bake in a well-greased 15cm volcano cake pan for 35 minutes in a preheated 180° oven.
- Place the chocolate in a bowl, the coffee and the hot milk.
- Wait 5 minutes, mixing well until it becomes a cream.
- Pour over the cake while still hot and sprinkle with cinnamon.
