  • Xylitol70 g
  • Coconut oil30 g
  • Vanilla Extract15 ml
  • Oat flour50 g
  • Brown rice flour20 g
  • Brewed coffee50 g
  • Cinnamon powder3 g
  • Cocoa5 g
  • Yeast5 g
  • Ganache: 70% chocolate80 g
  • Ganache: almond milk1 cup
  • Ganache: brewed coffee40 g
  1. Beat the eggs with the xylitol until doubled in size.
  2. Add the oil and extract and beat for another 20 seconds.
  3. Add the flours, cocoa, cinnamon and coffee and beat for 30 seconds or until smooth.
  4. Bake in a well-greased 15cm volcano cake pan for 35 minutes in a preheated 180° oven.
  5. Place the chocolate in a bowl, the coffee and the hot milk.
  6. Wait 5 minutes, mixing well until it becomes a cream.
  7. Pour over the cake while still hot and sprinkle with cinnamon.
