  • Oil1 tablespoon
  • White rice1 cup
  • Boiling water3 cup
  • Fondo1/2 tablespoon
  • Lemon juice1 tablespoon
  • Hard-boiled egg passed through a coarse sieve1 unit(s)
  • Grated Parmesan2 tablespoon
  1. In a pan, heat the oil and sauté the rice until dry and shiny.
  2. Add the boiling water, fondor and lemon juice. Mix well and cook over low heat for about 15 minutes with the pan partially covered.
  3. Turn off the heat and leave the pan covered for another 10 minutes so that the rice finishes cooking in its own steam.
  4. Gently mix in the sifted egg, sprinkle with grated Parmesan cheese and serve immediately.
