Wholemeal Creamy Chicken Pancake

- Skimmed milk1 cup
- Oat flakes or oat flour0.5 cup
- Wheat Flour (White or Wholemeal)0.5 cup
- Egg1 unit(s)
- Shredded chicken breast300 g
- Salt to taste
- Light cream cheese3 tablespoon
- Grated Parmesan Cheese to taste
- Beat the milk, oatmeal, wheat flour, egg and a pinch of salt in the blender until a very homogeneous mass. Reserve.
- Season the shredded chicken to taste (I like to use paprika, oregano, pepper, salt, parsley) and mix with the curd. Reserve.
- Heat a non-stick frying pan greased with a little oil, pour 1 ladle of the dough and spread it well all over the bottom of the pan. When the dough comes off, turn it over. You don't need to brown too much, just leave it until the dough releases from the skillet.
- Stuff the pancake disc with 2 tablespoons of the creamy chicken, roll it up and take it to a platter that can go in the oven.
- Cover with a little sauce of your choice, sprinkle with grated cheese and put it in the oven to heat up.
- Tip: vary the stuffing and serve with a green salad!
