- Olive oil1 tablespoon
- White wine1/2 cup
- plant milk1.5 cup
- Salt to taste
- Black pepper to taste
- Dijon mustard1/2 teaspoon
- Lemon juice1/2 unit(s)
- Parsley to taste
- Linguine to taste
- Chop the onion into cubes, the garlic cloves into slices, the tofu into small cubes and the cauliflower into florets.
- In a pan, add the oil and brown the smoked tofu. Reserve.
- In the same pan, sauté the onion and garlic. Add the white wine and cook until evaporated.
- Add the cauliflower florets, vegetable milk, salt and pepper. Cover the pan and cook until the florets are very soft.
- When ready, transfer everything to the blender and add the mustard and lemon juice. Beat until very smooth. If the sauce is too thick, add a little water.
- Transfer the sauce to the pan and adjust the salt and pepper. Return with the fried tofu and add the chopped parsley.
- Add the linguine and serve immediately.
