- tagliatelle300 g
- Spicy fresh sausage300 g
- mascarpone150 g
- Salt to taste
- dry white wine100 ml
- butter1 tablespoon
- Put the pasta water on the fire, at least 3 liters. When it boils, add salt. The idea is to make it salty like sea water.
- While the water is boiling, remove the skin from the sausage, thresh the meat from the stuffing and toast in butter until golden. Add the white wine to deglaze the bottom of the pan and get all the flavor.
- Put the pasta to cook for at least 2 minutes less than indicated on the package. Drain and reserve a cup of the cooking water.
- Return to the sausage and add the cheese, pasta and a ladle of the cooking water. Stir well, let the sauce thicken and serve immediately.
