  • Finely flaked oatmeal, you may use a little more or less, add it little by little until it becomes a dough that doesn't stick to your hand.3 tablespoon
  • Seasonings to taste, black pepper0 to taste
  1. Cook the sweet potato, mash it and in a bowl, mix the slightly beaten egg, seasonings to your liking and gradually add the oatmeal.
  2. Then form small balls and press lightly with your finger to feed the surface of the gnocchi.
  3. With the skillet already with the modeled gnocchi, heat a skillet and drizzle with olive oil, arrange the gnocchi and let them brown slightly on one side and turn to love the other.
  4. Reserve and you can serve with the sauce you prefer. I made a very fresh tomato and parsley rustic sauce.
