spaghetti noodles100 g
Grated Parmesan Cheese30 g
Pancetta or Bacon20 g
Gems2 unit(s)
Black pepper to taste

Start by cooking the pasta, it doesn't have to be exactly spaghetti you can change it to your preference.
While the pasta is cooking, place the diced pancetta or bacon in a skillet over medium heat until crispy.
In a bowl, place the yolk, cheese and black pepper. Mix until it forms a paste. If it doesn't form, add more cheese or if you prefer one more yolk
Remove the pancetta or bacon from the heat and place them on a paper towel.
Remove excess fat from skillet. With the fire off, place the al dente pasta and place half a ladle of the water that the pasta was cooked in.
Add the yolk mixture and stir until the sauce forms. The sauce needs to envelop the pasta.
Put 3/4 of the Pancetta or Bacon, leave a little to finish.
Assemble the dish and finish with the Pancetta or Bacon and plenty of black pepper.
