  • Egg Yolk3 unit(s)
  • Bacon200 g
  • Parmesan150 g
  • Salt to taste
  • Black Pepper to taste
  1. Cut the Bacon into small cubes and fry in its own fat and set aside.
  2. Cook the pasta according to the manufacturer's guidelines
  3. Make a mixture with the cheese and the egg yolks and set aside.
  4. In the pan where the bacon was fried, add the batter about 30 seconds before the end of cooking.
  5. With the pan turned off, add the cream of yolks and parmesan and stir quickly so that it emulsifies with the pasta.
  6. Add a bead of pasta cooking water to make a lighter sauce.
  7. Add the Bacon and finish with kingdom pepper.
