  • Organic Dry Yeast5 g
  • Water50 ml
  • Wheat flour3 cup
  • Salt1/2 tablespoon
  • Sugar4 tablespoon

  • Cold milk75 ml
  • unsalted butter to taste
  1. For the sponge: In the bowl that will make all the bread or in the bowl of the planetary mixer, add the first proportion of flour listed above, the yeast and water (room temperature). Mix, cover and let it rest for 30 minutes until it rises and is aerated (full of holes).
  2. Dough: Soon after, add the second flour listed above, salt, sugar and eggs in the same container. Start kneading. Keep the milk nearby. As soon as the flour absorbs the eggs, check if the dough needs hydration. If it is hard, add the milk little by little. Maybe you don't need to put everything. It varies from flour to flour.
  3. First fermentation: when the dough is homogeneous, stretch it out with wet hands. If you can stretch without tearing, you're done (veil stitch). Shape a ball and place it in the same bowl you used to knead the dough. Let it rest for an hour, covered with a cloth.
  4. Modeling: Soon after, SLIGHTLY flour the bench. Place the dough on a SLIGHTLY floured workbench and cut it into 3 equal pieces (if you have a scale at home, I recommend you use it. Weigh the whole dough and on the calculator, divide the weight by 3). Then take the pieces one by one, and roll each one, seal the seam and make a three-legged braid (see videos on the internet, it's hard to try to teach with writing). Carefully arrange in a loaf pan or loaf pan, greased with oil or butter.
  5. Last fermentation and baking: Leave to ferment covered with a cloth for about 1:30. When there are 30 minutes left, preheat the oven to 180 (gas oven) or 170 (electric oven with heat on the bottom). When time passes and the dough is almost at the edge of the form, brush an egg over the bread and put it in the oven, leave it for about 20 minutes, after that open the oven, turn the roast so that the bread bakes evenly and leave another 10 (total 30 minutes).
  6. Finishing: As soon as the bread comes out of the oven, brush it with butter at room temperature. Let cool and unmold. Enjoy your food.
