  • Rigatoni (Grano Durum)500 g
  • Bacon cubes100 g
  • Yolks (egg)5 unit(s)
  • Parmesan100 g
  • Fresh cream100 ml
  • Black pepper to taste
  • Salt to taste
  1. In a pan with 4 liters of water over high heat. When it boils, add 2 tablespoons of salt, add the pasta and mix. Let it cook for the time indicated on the package or until al dente. While the pasta is cooking, prepare the other ingredients.
  2. In a small bowl, separate the yolks one at a time and transfer to another bowl. Add the grated Parmesan cheese, salt, cream and pepper to taste. Beat well with a fork to mix.
  3. Place a large skillet over medium heat. When hot, brown the bacon for about 5 minutes, stirring occasionally.
  4. Let's finish, drain the water, transfer the pasta to the frying pan with the hot bacon, add the eggs and mix well, with the fire off, the idea is that the heat of the pasta cooks the eggs, forming a cream, stirring with a spatula for few minutes until it forms a thick sauce. Be careful not to overcook the eggs.
