First cook the potatoes without the skin, the point of the potato has to be al dente, neither too hard nor too soft.

Then add the wheat flour little by little and knead with your hand forming a ball until it unglued from your hands.
Now divide the dough into portions and make some little snakes to make the gnocchi (the gnocchi are nothing but squares like in the photo above.
After the formed gnocchi, take the water from the potato cooking and put it to boil, put the formed gnocchi in the boiling water,
When the gnocchi rises, it can be taken out of the water.
It is ready, to accompany with a sauce of fresh herbs.
1 clove of garlic
5 tablespoons of oil or olive oil
Salt to taste, everything to taste.
Put the sauce on the gnocchi and that's it.
