- Potato1 kg
- Wheat flour1 cup
- Egg Yolk2 unit(s)
- Salt to taste
- Ground beef500 g
- Crushed Garlic Clove3 unit(s)
- Chopped Onion1 unit(s)
- Tomato sauce500 ml
- Chopped coriander1 cup
- Chopped Arugula1 cup
- Wash the potatoes, put 2 liters of water in a pan and bring to a boil, then add the potatoes and cook until soft.
- Once cooked, drain, let cool and peel. In a container, mash the potatoes and add the other ingredients of the gnocchi (flour - yolk - salt) and mix very well until it becomes a homogeneous mass.
- On a bench or table, sprinkle wheat flour and, make rolls and with the knife cut the gnocchi squares (if you have a gnocchi even better).
- In the same pan that you cooked the potatoes, fill with water and bring to a boil, boiled?, put the gnocchi squares little by little to cook, you know it's cooked, when the gnocchi start to float, remove the cooked gnocchi and put in another bowl with cold water, to suffer a thermal shock and leave it consistent. Then drain and reserve.
- In a pan, brown the garlic and onion with the butter, add the ground beef, when it is already cooked, add the tomato and cilantro sauce and the chopped arugula.
- Hit the salt and put the sauce on top of the gnocchi, then just serve and enjoy
