  • Chopped Bacon1/2 cup
  • Thin pepperoni1 unit(s)
  • Chopped Broccoli1 cup
  • Finely chopped small onion1 unit(s)
  • Bay Leaf1 unit(s)
  • Butter2 tablespoon
  • Wheat Flour2 tablespoon
  • Milk500 ml
  • Sour cream100 g
  • Freshly grated cheese (provolone or parmesan)30 g
  • Nutmeg to taste
  • Salt to taste
  • Boiling water4 l
  1. First of all, cut and clean the broccoli, I steamed it with a little salt, because I prefer it that way, but you can do it in water anyway. Leave it al dente, drain if necessary and reserve. I prefer smaller pieces, but it's up to you.
  2. Fry the bacon and pepperoni, when it's almost done, add the onion. Remove from the pan and set aside. We are going to use the bottom left over from frying in the same pan and sauté 2 tablespoons of butter with 2 tablespoons of wheat flour for two minutes until that almond smell rises, over medium heat. This process is called 'Roux' and is what will serve as a thickener for your white sauce, without getting that marked taste of flour. Then you will add the milk and stir well preferably with a fuê so as not to run the risk of forming lumps. As soon as you dissolve the flour, season with salt, black pepper and nutmeg, which makes all the difference to me. You can also put a bay leaf to perfume the sauce, let it boil stirring constantly until it starts to thicken, it shouldn't be too thick. At that moment, add the cream and mix well, add the bacon and pepperoni that was reserved at the beginning and also the already pre-cooked broccoli, mix again, add the grated cheese and adjust the salt if necessary.
  3. Cook the pasta in boiling water with a tablespoon of salt for the time indicated on the package. Always cook with very hot and very salty water so that the pasta does not become bland, and over high heat, the more it bubbles, the less chance your pasta will come out all stuck together. Keep stirring from time to time to avoid sticking and to even out the cooking process. Remove from the heat, drain and add to the sauce. You can turn the heat back on to heat the sauce and add the pasta well. Help yourself!
