- Fusilli Noodles300 g
- Tuna in olive oil400 g
- Large Sicilian Lemon1 unit(s)
- Small pot of salted capers (remove salt)1 unit(s)
- Arugula120 g
- Parsley to taste
- Extra Virgin Olive Oil to taste
- Put a pot of water on the fire to boil
- Place a skillet over medium heat and add oil.
- Add the tuna, breaking into small pieces with a fork, and the lemon zest and juice, and mix well.
- Add the capers and parsley, and mix well.
- Season with salt and black pepper, and mix once more, then leave on the fire for 5 minutes before turning off.
- Add salt to boiling water
- Add the fusilli and cook for 1 minute less than indicated on the package.
- When the pasta is ready, put the skillet back on low heat and add 1 cup of the water in which the pasta was cooked, mixing with a spoon.
- Add the drained pasta and arugula to the skillet, mix well and, if necessary, add more of the water the pasta was cooked in (this helps to thicken the sauce)
- Mix for about 1 minute, then remove from heat.
- Serve
