  • Wheat flour1 kg
  • warm milk350 ml
  • Water250 ml
  • Oil150 ml
  • Margarine2 tablespoon
  • Sugar1 tablespoon
  • Salt1 teaspoon
  • Organic Yeast10 g
  • Cottage cheese5 dessert spoon
  • Mozzarella cheese500 g
  • Oregano1 dessert spoon
  • Cornmeal in fine flakes100 g
  1. You will mix the warm milk with the sugar, yeast and margarine
  2. In a large bowl, add the wheat flour, salt, oil and the milk mixture and mix with a large spoon.
  3. When you get the consistency, it will go to the bench with more flour so it doesn't stick and knead for 10 minutes (very important time to knead)
  4. You will make portions of approximately 50g in each ball and reserve in a form with cornmeal at the bottom
  5. Set aside for 40 minutes or until oversized.
  6. In the meantime, let's prepare the filling that can be to taste.
  7. In a bowl, place the chopped or grated cheese with the cottage cheese and the oregano.
  8. When the dough balls get big you will open them always leaving a border around (use the bottom of a glass to help you)
  9. Add the stuffing and let it rest for another 10 minutes (with the cornmeal always at the bottom of the esfirras in the mold)
  10. Then put it in the oven until golden and you're done! Your family will love it.
