- Filet Mignon600 g
- Chopped Onion1 unit(s)
- Minced Garlic Cloves2 unit(s)
- Dry mushrooms40 g
- White wine1/2 cup
- Fresh cream500 ml
- Parmesan50 g
- Hydrate the funghi with boiling water for 30 minutes. Chop the onion and garlic. Place the funghi in the food processor and reserve the hydration water.
- Cut the meat into small/medium pieces.
- Heat a frying pan with a drizzle of oil and a little butter and brown the pieces of meat in two batches, so that there is no water. Season with salt and pepper and put aside.
- In the same skillet, sauté the onion with a little butter for about 5 minutes. Add the garlic and mushrooms and sauté for 2 minutes.
- Deglaze the skillet with the wine, wait for it to evaporate a lot. Add the funghi hydration broth, using a very fine sieve, so that the soil that remained at the bottom does not go with it. Wait for it to evaporate enough.
- Add the fresh cream, wait for it to thicken, add the cooked pasta, grated Parmesan cheese, and come back with the meat. Stir and serve next.
