- This recipe is made with the help of a mixer with a hook for beating.
- In a bowl, mix the warm water with the sugar and the yeast until dissolved and let it rest for a few minutes until it ferments (foams).
- In the mixing bowl, add the flour and salt.
- Make space in the middle of this mixture and pour in the fermented liquid and mix until incorporated.
- Put to beat in the mixer with the hook, starting on low speed and gradually increasing to high. Let it beat for between 10 and 15 minutes until the dough is homogeneous and loosens from the edges.
- Grease another bowl with a little oil and transfer the dough to it, covering it with plastic wrap.
- Let it rest in the warmest corner of your kitchen, in a place without wind, until the dough rises and doubles in size (about 1 hour).
- Light the wood-fired oven or heat the homemade oven about 20 minutes before starting the pizza.
- When the dough is ready, separate the dough into equal parts (if you are going to make large pizzas, you can divide it into 4 parts. If you are going to make bratty, debt in more parts). Take the one you are going to use and cover the other parts with plastic wrap or a dish towel until their turn comes.
- Sprinkle flour on the countertop and, with the help of a rolling pin or a clean bottle of wine, roll out the dough in a circle.
- Place in a round baking dish sprinkled with flour, cover with a layer of tomato sauce and then the chosen filling and put it in the oven.
- In the wood-fired oven, my medium-sized pizzas took about 5-7 minutes to cook. The time will vary depending on the oven you use. Keep an eye on the dough (which should be dry and crispy) and the filling (if the cheese has melted and browned, for example).
