Creamy Polenta with Escarole

  • Recipe
  • Fuba1 cup
  • Sliced Escarole1/2 unit(s)
  • grated onion2 tablespoon
  • Minced Garlic Clove1 unit(s)
  • Olive oil1 tablespoon
  • Water3 cup
  • Salt to taste
  • Pepper to taste
  • Grated Parmesan Cheese to taste
  1. Heat the oil in a pan, add the onion and garlic and sauté until golden brown. Add the water and let it boil.
  2. Add the cornmeal little by little and mix well to avoid lumps.
  3. Add salt and pepper and let it cook until it thickens. Always stirring.
  4. Saute the escarole with oil and garlic.
  5. Place the escarole in the deep dish, throw the polenta on top and sprinkle Parmesan cheese.
  6. Tip: make a bolognese sauce that goes very well!
