1 medium couscous, cooked and crumbled | 300g pork loin, cooked and cut into small cubes | 2 ripe plantains, cut into cubes| 1 diced tomato | 1 diced red onion | cilantro or parsley to taste | chives to taste. | 5 to taste
Recipe
In the fridge put
2 tablespoons of butter and 4 tablespoons of olive oil to prevent it from burning
Add the loin and let it brown a little.
Then add the onion let it soften and put the bananas
Mix and add the tomato
The chives and finally the cilantro
Note: If you notice that it is dry, add 3 to 4 tablespoons of water.
Remove from heat and set aside
In a bowl, mash the couscous well
Place the reserved loin inside and mix well.
