  • Cup of Flaked Corn Tea1/2 cup
  • Teaspoon of salt1/2 teaspoon
  • Tea cup of water2/4 teaspoon
  • Butter Soup2 tablespoon
  1. In a bowl mix the corn flour with the salt. Add the water little by little, stirring with a spoon to moisten the flour – the texture should be like wet sand, very humid. Let it hydrate for 10 minutes – this way the flakes are softer when steamed. Fill the bottom of the couscous bowl with water and fit the steamer basket into the pan. Transfer the hydrated corn flour to the basket, without compacting. Cover and bring to a boil over high heat.
  2. Once it starts to boil, a slight steam will come out of the side of the lid. Lower the heat and let cook for another 10 minutes until the couscous is very soft. Check when opening the lid: the couscous should be inflated and soft to the touch. Turn off the heat and, being careful not to burn yourself or overturn the basket, pull the central rod to unmold the couscous. Transfer to a bowl and break the couscous into pieces with a fork.
  3. In a small bowl mix the butter with ¼ cup (tea) of the boiling couscous water. Stir with a spoon until at least half of the butter is melted – it finishes melting with the heat of the couscous.
  4. Drizzle the buttered water over the couscous and mix with a fork – the buttered water makes the couscous more moist and flavorful. Serve next.
