  • 4 cup all-purpose flour4 cup
  • 1 yolk1 unit(s)
  • 1 whole egg1 unit(s)
  • 1 cup of vegetable shortening1 teaspoon
  • 4 tablespoons of butter4 tablespoon
  • Salt1 to taste
  • FILLING: 1 medium chopped onion1 unit(s)
  • 3 chopped tomatoes3 unit(s)
  • 2 cloves of minced garlic2 unit(s)
  • 1 tablespoon chopped green pepper1 teaspoon
  • 500 shredded cooked chicken500 g
  • 1 tablespoon olive oil1 tablespoon
  • 1 can of peas1 can(s)
  • 1 and 1/2 tablespoons of wheat flour1 tablespoon
  • 2 egg yolks for brushing2 unit(s)
  1. Place all the dough ingredients in a large bowl and mix well until a homogeneous dough forms. I recommend adding the flour little by little.
  2. Wrap the dough in plastic wrap and let it rest while you prepare the filling.
  3. Sauté the onion, garlic, tomato and pepper in olive oil. Add the shredded chicken and sauté a little longer.
  4. Add the wheat flour and mix very well, adding the milk all at once and stirring quickly.
  5. Add the peas, season with salt and add the parsley. Once it thickens, turn off the heat and set aside.
  6. Line the molds with the dough, separate a portion and press it against the bottom and side of the mold. Don't let the dough get too thick, remove the excess and repeat the procedure with all the molds. Reserve some of the dough for the lids.
  7. Place the rest of the dough on a large piece of cling film, cover it with another piece of cling film and roll it out. This is essential for the dough not to break.
  8. Cut 12 slices a little larger than the diameter of the molds and set aside.
  9. Fill the molds with the cold stuffing and place an olive on each pie. Cover with the dough round and pinch the edges with your fingertips.
  10. Brush the pie with the beaten egg yolk and bake until golden, about 20 minutes. Unmold after it cools down and serve.
