Carrot and Zucchini Spaghetti with Chicken and Fresh Herbs

  • Zucchini cut into thin strips01 unit(s)
  • Salt to taste
  • Pepper to taste
  • Curry powder to taste
  • Fresh Curry to taste
  • Fresh Oregano to taste
  • Fresh thyme to taste
  • Garlic01 unit(s)
  • Small onion1/2 unit(s)
  • Chicken breast01 unit(s)
  • Butter01 dessert spoon
  • Olive oil01 dessert spoon
  • White wine80 ml
  • Tomato sauce2 tablespoon
  • Red bell pepper strips1/2 unit(s)
  1. Cut the chicken breast into small cubes and season with salt and pepper;
  2. In a skillet heat the butter and oil then add the chicken cubes;
  3. When the chicken is golden, season with the curry powder, mix well and then add the garlic, onion, pepper, fresh curry, fresh oregano, fresh rosemary, fresh thyme and sauté;
  4. Add the white wine and let it simmer over low heat.
  5. In another pan, boil water, add salt as if you were going to cook pasta, first put the carrots and cook until soft, then add the zucchini and cook for 2 minutes.
  6. Add the tomato sauce to the chicken and mix, if you need more liquid, you can use a little of the water from the cooking of the vegetables;
  7. Add the vegetable spaghetti to the chicken stir-fry and finish with fresh thyme and fresh oregano.
