Cut the bacon into cubes.
In a bowl, place the yolks, the egg and mix with the grated cheese, until it has a not-so-soft consistency.
Add a ladle of the pasta water to the mixture.
Place the pasta almost al dente in the bacon pan with a little pasta water.
Finish cooking the bacon in the pan, when the water dries up, add the mixture and stir very quickly.
If it gets too soggy, add pasta water.
Serve grating cheese on top.
