  • Spaghetti or noodles500 g
  • Egg Yolks8 unit(s)
  • Diced Bacon300 g
  • Grated Parmesan1 cup
  • Cooking water to taste
  1. In a pan, bring water to boil with a generous pinch of salt and then put the pasta to cook according to the cooking time on the package. But count about 2 minutes less, to finish in the skillet.
  2. During this time, on a platter, beat the two egg yolks with the parmesan and black pepper. In case it takes time to get a point, add a spoonful of the cooking water and stir until uniform.
  3. Now with a frying pan, sauté the bacon until it becomes quite crispy, then take it out and sauté the pasta al dente in the bacon fat.
  4. Finish by removing the pan from the heat and vigorously adding the previously made mixture and adding cooking water, if necessary. The point will be when you have a very smooth and creamy sauce.
  5. Then just add the braised bacon on top and serve next.
