  • Wheat flour180 g
  • Whole wheat flour1 cup
  • Rye flour1 cup
  • Cocoa powder1 tablespoon
  • Brown sugar3 tablespoon
  • Butter50 g
  • Cane molasses60 ml
  • Organic Dry Yeast10 g
  • Warm water240 ml
  • Salt1 teaspoon
  • Cornmeal to taste
  1. In a bowl place the 3 flours, cocoa powder, brown sugar and yeast and mix well. Add the warm water and stir again. Add the cane molasses, butter and salt and mix some more. Transfer to a countertop dusted with wheat flour. Knead for 15 minutes, the dough can't get dry, so don't put too much wheat flour Transfer to the bowl and cover with a cloth. Let rise for 40 minutes Transfer to countertop and divide into 3 equal pieces Stretch the dough, fold and shape Sprinkle cornmeal on a baking sheet Arrange the buns leaving a space between one and the other. Sprinkle cornmeal on top Cover with a cloth and let it rest for another 40 minutes. Bake in a preheated oven at 200 degrees for about 35 minutes. Delight yourself with this slightly sweet and fluffy bread.
