- 1. **Couscous Pasta**: - 2 cups corn flour2 cup
- 1 cup of water1 cup
- 1/4 cup palm oil - Salt to taste1 cup
- Salt to taste to taste
- 1/4 cup grated cheese (Parmesan cheese or catupiry cheese)1 cup
- 1/4 cup chopped fresh oregano1 cup
- 2. **Acarajé**: - 1 cup of cooked and crushed black beans1 cup
- 1/4 cup palm oil1 cup
- 1/4 cup chopped onion1 cup
- 2 cloves of garlic, chopped to taste
- 1/4 cup chopped black pepper1 cup
- Salt to taste to taste
- 3.Cheese Flavoring: 2 tablespoons of grated cheese2 tablespoon
- 1. Mix the corn flour with water in a bowl until it forms a homogeneous dough.
- 2. Add the palm oil, grated cheese and chopped fresh oregano. Mix well.
- 3. Let the dough rest for 30 minutes.
- ### Preparation of Acarajé: 1. Mix the cooked and crushed black beans with the palm oil, chopped onion, chopped garlic cloves and black pepper
- 2. Season with salt to taste.
- ### Preparation of Cheese Flavoring 1. Mix the grated cheese with 2 tablespoons of water to form a homogeneous mixture.
- ### Assembling the Acarajé with Couscous Pasta and Cheese Flavoring 1. Divide the couscous dough into equal portions.
- 2. Place a portion of the dough on the palm of your hand and, with your index finger, make a hole in the center.
- 3. Place some of the acarajé in the hole.
- 4. Close the hole and form a dumpling.
- 5. Repeat the process with the remaining portions of the dough.
- 6. Place the dumplings on a baking tray greased with palm oil.
- 7. Bake the acarajés in a preheated oven at 180°C for 20 minutes.
- 8. Remove from the oven and add the cheese flavoring over the acarajés.
- 9. Serve hot.
