- In a bowl, mix the flour, yeast and salt.
- Cover with a tea towel and let it rest for 10 minutes.
- After this period, in the bowl itself, make 10 folds, from the sides to the center of the dough.
- Cover and let rest again. This process of folding and resting for 10 minutes should be repeated 4 times.
- After the 4 rests and 10 minute folds, now comes the 1 hour break + 10 folds.
- Flour a surface and roll the dough.
- Flour a round shape that you can cover. Stainless steel or cast iron pans can also be used, or any container that can be put in the oven and has a lid.
- Place the dough in the container and let it rest for 45 minutes.
- At this time, light the oven at 200 degrees.
- After this last rest, sprinkle some wheat flour over the dough and with a very sharp knife make cuts in the way you want. This will make the bread beautiful!
- Bake for 25 minutes with the lid on.
- Remove the lid and bake for another 30 minutes, or until golden.
