- Cooked Butter Beans1/2 cup
- Chopped Bacon2 tablespoon
- Chopped pepperoni1/3 cup
- Chopped Onion2 tablespoon
- Chopped Garlic1 teaspoon
- Egg2 unit(s)
- Fine cassava flour1/3 cup
- Chopped Chives1 tablespoon
- Ground black pepper to taste
- Sea Salt to taste
- Lard1 dessert spoon
- In a high non-stick skillet, fry the bacon and sausage until it releases the fat well. Book and use the fat released to prepare the egg.
- Add the eggs to the fat and make scrambled eggs, but do not mix too much so that they become more chunky. Reserve.
- Add the lard to the heated skillet and fry the onion and garlic.
- Add the beans and sauté, season with salt and pepper.
- Return the sausage, bacon and egg reserved to the skillet and mix.
- Add the flour and stir to incorporate. Adjust the salt.
- Mix for another 2 minutes and finish with the chives. Serve immediately.
