  • Black-eyed Beans250 g
  • Sliced pepperoni2 unit(s)
  • Diced Bacon100 g
  • Cassava flour150 g
  • Breadcrumbs100 g
  • Chopped Onion1/2 unit(s)
  • Minced Garlic Cloves3 unit(s)
  • Coriander1 tablespoon
  • Salt to taste
  • Black pepper to taste
  • Butter1 tablespoon
  1. Cook the black-eyed peas under pressure for 10 minutes. Drain and reserve.
  2. In a large pan, melt the butter and fry the bacon and pepperoni.
  3. Add the onion first and then the garlic to sauté in the butter and meat fat.
  4. Add the coriander. Shake well
  5. Add the two flours, mixing well, frying. Add salt and pepper, mixing well.
  6. Add the black-eyed peas and mix.
