Season the loin the day before if possible.
With garlic and salt and black pepper.
Put the chopped onion.
And leave it in the fridge.
Put the oil in the pan and let it heat up. Then put the loin with the seasonings..
Let it fry and go turning and adding the water (the well-known drip and fry).
This way the meat will be as if it was made in the oven..
