- Chimichuri1 tablespoon
- Olive oil1 tablespoon
- Salt to taste
- Onion1 unit(s)

- Cabotia squash1 unit(s)

- Quinoa1 coffee spoon
- In the pressure cooker, place the meat in cubes and the oil and let it brown well, then put the garlic, onion, chimichuri and salt and let it fry well. Then cover the meat with water and put the pressure for approximately 45 minutes. The meat will be very soft there and just shred it
- Peel the squash and put it to cook, when it is very soft, mash and set aside. In a pan, fry garlic and onion in olive oil and put the pumpkin puree, salt to taste and finish with cilantro.
- Assemble the meat and puree on top, sprinkle raw quinoa
