- Peeled pumpkin cut into medium cubes4 cup
- Beef sausage cut into half moons2 cup
- Chopped Onion1/2 cup
- Chopped Garlic1 dessert spoon
- Chopped green onion1/4 cup
- Salt to taste
- Ground black pepper to taste
- Hot water1/2 cup
- In a pan fry the sausage well until it releases the fat.
- Discard the excess fat, add the onion and sauté.
- Add the garlic and continue to sauté. Add the pumpkin, half the water, salt and pepper, mix and cook over medium heat.
- Keep stirring a few times and add the rest of the water little by little until the pumpkin is completely cooked.
- Adjust the salt, finish with the chives, mix and serve next.
