- Dry red wine100 ml
- Crushed garlic clove3 unit(s)
- Smoked paprika1 coffee spoon
- Saffron1 coffee spoon
- Salt, black pepper and dehydrated parsley to taste
- Ketchup300 g
- Worcestershire sauce1 tablespoon
- Brown Sugar2 tablespoon
- Dry white wine50 ml
- Butter1 tablespoon
- Chopped Onion2 tablespoon
- Minced Garlic Clove1 unit(s)
- Salt and pepper to taste
- Small Potatoes1 kg
- Salt, black pepper and green smell to taste
- Butter1 tablespoon
- Start by putting the seasonings on the cutlet and leave it marinating for 4 hours in the fridge. Cook the unpeeled potatoes and set aside.
- In a hot skillet with a drizzle of olive oil, brown the ribs on both sides. Place on a baking sheet, cover with aluminum foil and bake in a preheated oven at 200 degrees for 1 hour and 40 minutes.
- While the ribs bake, let's prepare the sauce! Brown the onion and garlic in the butter, add the sugar and when it is melted, add the other ingredients, mix and cook for about 5 minutes.
- If you want to add even more flavor to the sauce, you can add 2 bay leaves and a pinch of smoked paprika.
- After 1 hour and 40 minutes, remove the ribs from the oven, remove the foil, brush the sauce all over the ribs and return to the oven for another 15 minutes.
- While the ribs are being finished in the oven, take the cooked potatoes and press them lightly with your hands. Brown them in a skillet with butter and a sprig of rosemary. Finish with salt, pepper and greens.
- Serve the ribs accompanied by the potatoes.
