Potato800 g
Bacon200 g
Mozzarella200 g
Salt to taste
Pepper to taste
Parsley to taste
Cherry Tomato3 unit(s)
Wheat Flour100 g

Wrap each potato in aluminum foil, and place in the Air Fryer for 20 minutes. The time may vary depending on the size of the potatoes. I usually use 4 large potatoes.
Cut the bacon into cubes and take it to a frying pan to fry.
Peel the potatoes and pass them through a coarse grater (Multi-processor makes it much easier).
Mix the grated potato with the bacon, wheat flour, salt to taste and pepper to taste and mix well.
Heat a skillet greased with olive oil and make a bed with 1/4 of the grated potato.
Place mozzarella in the central part and close with 1/4 of the potato.
Leave on the fire until golden and turn aside.
Serve on a plate, garnishing with cherry tomatoes and chopped parsley.
