Made from chicken
Cook the potatoes until they are al dente. (I like it a little firmer)
Once they are warm, cut in half and set aside.
Cook the chicken breast with a little salt, shred and set aside.
With a spoon, remove a little of the potato core, and mix with the ingredients.
Place inside the cockroach, stuff the potato and sprinkle with Parmesan.
Bake at 170°C for 10 minutes, just until golden.
Finish with the parsley and serve.
