- Dry red wine750 l

- Salt and Black Pepper1 to taste
- Butter3 cup
- Tamarind6 unit(s)
- Honey100 ml
- The night before, I marinated the pork ribs in wine with the onion, the chopped parsley, the garlic cut in half and the thyme, brown the rib pieces in olive oil with a little butter.
- Add the marinade, cover with wine, adjust the salt and pepper, add a little boiling water and let it cook until it starts to shred.
- I let it cool and shred the rib and put it in a refractory, put cling film and take it to the freezer, strain the broth, add the tamarind and honey and let it reduce. Finish with butter cut the shredded rib in the desired shape. Grill with oil and serve.
